LIFESTYLE NEWS - As luck would have it, World Ice Cream Day falls smack in the middle of winter - on 21 July.
The good news is fried ice cream is a contradiction that makes perfect sense.
The crunchy, warm coating provides just enough heat to make it comforting, while the ice cream core keeps it light and refreshing.
Ingredients
- 4 scoops of vanilla ice cream
- 1 cup crushed cornflakes or digestive biscuits
- 1 tsp cinnamon (optional)
- 1 egg
- 1 tbsp milk
- Oil for frying
- Whipped cream, chocolate sauce, and chocolate chips (for garnish)
Method
- Scoop the ice cream into firm balls and place them on a tray. Freeze for at least 2 hours or until rock solid.
- Mix crushed cornflakes or biscuits with cinnamon (if using).
- Beat the egg and milk together in a small bowl.
- Roll the frozen ice cream balls in the crumb mixture, dip in the egg wash, then roll again in the crumbs for a thick coating. Freeze for another hour.
- Heat oil in a deep fryer or pan to 190°C (375°F).
- Fry each ball for 10–15 seconds until golden brown. Remove with a slotted spoon and drain quickly on paper towel.
- Serve immediately with whipped cream, chocolate drizzle, and chocolate chips.
